Nourishing Chicken Bone Broth

Home-made, slow-cooked chicken broth has long been known to aid recovery from disease, hence the old wife's tale of bringing chicken soup to those who are ill.


Chicken broth contains an array of amino acids, essential minerals and cartilage which helps to form a robust immune system and resilience against 'bad bugs'. This 'liquid gold' is also known to support a healthy digestive tract by providing nourishing nutrients to heal your gut and improve digestion. As the gut is the root to everything to do with health, the benefits of consuming bone broth also includes improving hormone regulation, weight control, brain health and mood disorders.



Ingredients:



  • 1 large free-range, organic chicken

  • 2- 3 liters filtered water

  • 2 Tbls. apple cider vinegar (organic, with mother)

  • 1 large onion, coarsely chopped

  • 2 carrots, peeled and coarsely chopped

  • 3 celery stalks, coarsely chopped

  • 1 bunch parsley or other herbs

  • A handful of peppercorns

  • 1-2 Bay Leaf

  • Pinch of Himalayan/sea salt



Method:


  1. Fill up a large stockpot (or large crockpot) with filtered water. Alternatively, use a slow cooker and put all the ingredients in at once and cook for 24 hours.

  2. Add vinegar and all vegetables except parsley to the water.

  3. Bring to a boil, and remove any scum that rises to the top.

  4. Reduce the heat to the lowest setting and let simmer for 8-12 hours (the longer the better).

  5. Add the fresh parsley about 10 minutes before finishing the stock, as this will add healthy mineral ions to your broth.

  6. Remove remaining bones from the broth with a slotted spoon and pour the rest through a strainer to remove any bone fragments.


A few tips!

  • The longer you simmer the bones, the more nutritious and healing it becomes.

  • Use your broth for soups, stews, or drink it straight. No need to ever buy stock cubes again!

  • Freeze the broth in small batches to always have some on hand.

  • Don't be alarmed by the fatty substance formed on the top once it's cooled down as this is packed with healthy fats and valuable nutrients, and is in fact the best part to consume. Simply re-heat the broth until it's all dissolved again.

  • Consume a therapeutic dose of 125-250ml per day for best effect.

  • Enjoy!
